Carrot Cake Smoothie for Breakfast 2.0

Do you remember this?

That was delicious and nutritious but this today's version is a little more smooth, more milkshake-y. Amaressa gulfed this down for a snack. It was delicious and a very nutritious treat!
Carrot Cake Smoothie for Breakfast 2.0
Ingredients:
2 c carrots, lightly steamed
1 c unsweetened milk  *see note for milkshake version
1 frozen banana
1 Date
1 t scant cinnamon powder
1 t vanilla extract
2 T almond butter
pinch of baking soda (somehow makes it more cakey)

Really it's the first three ingredients that make the smoothie. Feel free to omit some of the other ingredients or you could add coconut butter or even butter extract. For a delicious milkshake version (and higher in healthy fats), use canned coconut milk. This would be so delicious as an ice cream!

Blend all ingredients in a blender and enjoy!

    I found your blog through food gawker and made this smoothie this morning. It was delicious! But I was just wondering how long you recommend steaming the carrots for? I used 2 c of baby carrots and I think I didn't quite steam them long enough. I'm trying to get the right texture. Thanks!

    1. Hi there!
      Do you have a high speed blender? This might matter. If not, steaming the carrots a little longer so they are easier to mush might work better.
      I check the texture of the carrots with a fork. I usually steam for about 10 minutes and then poke with fork. If the carrot is easily stabbed and the fork comes out easily then they are perfecto.

    1. This serves two unless you want a large smoothie recipe. I've made this before and drank the whole thing for breakfast but usually I share it with my little girl.
